Ingredients

1 cup Mahatma® Whole Grain Brown Rice or Mahatma® White Rice
1 tsp vegetable oil
4 boneless, skinless chicken breasts
1 can (10 ¾ ounce) reduced fat and sodium condensed cream of chicken soup
1/2 cup water
2 cups fresh broccoli florets

Directions

Prepare rice as per package directions.
 
Heat oil in a medium skillet over medium heat.  Add chicken and brown on each side, about 10 minutes.  Remove from skillet.  Add soup, water, broccoli and rice.  Stir to combine. Bring to a boil.  Top with chicken, cover, reduce heat to low and simmer 5 minutes, or until broccoli is crisp, tender.
