Directions
Prepare rice according to package directions.
While rice is cooking, heat olive oil in a large skillet. Sauté onions, garlic, celery, carrots, and bell pepper until tender. Add corn and sausage, cook for 10 minutes. Fold in cooked rice; fold in remaining ingredients, continue to cook until heated through.
Serving Suggestion: May be used as stuffing for poultry, a filling for bell peppers, or as a breakfast filling for tortillas combined with scrambled eggs.
