Ingredients

1 cup Mahatma® White Rice
2 tbsps olive oil
1 cup onion, chopped
2 garlic cloves, minced
1/2 cup celery, chopped
1/2 cup carrots, diced
1 red bell pepper, chopped
1 can (12 oz) whole kernel corn, drained
2 pkgs (12 oz each) sausage or chorizo, with casings removed
salt and pepper, to taste
1/2 cup chicken broth
3/4 cup green onion, chopped
2 tbsp fresh thyme leaves

Directions

Prepare rice according to package directions.

While rice is cooking, heat olive oil in a large skillet. Sauté onions, garlic, celery, carrots, and bell pepper until tender. Add corn and sausage, cook for 10 minutes. Fold in cooked rice; fold in remaining ingredients, continue to cook until heated through.

Serving Suggestion:
May be used as stuffing for poultry, a filling for bell peppers, or as a breakfast filling for tortillas combined with scrambled eggs.
