Ye Olde Wilde Stuffing

This recipe appeared on the 6oz Carolina® Long Grain and Wild Rice mix packaging from 1970.  This recipe could be used for stuffing 3 to 5lb of poultry, or 6 Cornish hens.  It is also suitable for stuff pork chops, roasts, etc.

Ingredients

1 each Mahatma® Long Grain and Wild Rice mix
2 Tbsp butter
1/2 cup celery, chopped
1/4 cup onion, minced
1 jar (2.5 oz) mushrooms, optional
1 egg, well beaten

Directions

Prepare rice mix according to directions; except cook for 20-minutes instead of 25-minutes. Cool slightly. In 2 tablespoons of butter, sauté celery, onions, and mushrooms. Blend this mixture and one well-beaten egg with the cooked rice mix. Spoon into poultry, game bird, or other meat. And, roast according to your favorite method. For firm dressing, pour the prepared rice mixture into a greased 8-inch baking pan. Bake at 350°F for 30-minutes.
