Middle Eastern Salad

Serves 6

Ingredients:

1 cup Mahatma® Brown Rice (Whole Grain)
1/2 cup tomatoes, chopped
1 cup Feta cheese with basil, crumbled
1/2 cup purple onion, chopped
1/4 cup red bell pepper, chopped
1/4 cup yellow bell pepper, chopped.
1/4 cup green bell pepper, chopped
2 tbsp parsley, chopped
1/4 cup black olives, sliced
2 tbsp red wine vinegar
1 1/2 tsp olive oil


Directions:

Prepare brown rice according to package directions. Combine first nine ingredients (including cooked rice) in a large mixing bowl. Toss gently. In a small container, combine vinegar and oil. Shake to mix. Pour over mixture. Toss and refrigerate.
