Three Cheese Vegetable and Rice Skillet

Ingredients:

garlic, chopped |

onion, chopped |

broccoli florettes, cooked |

Parmesan cheese, shredded |

low-fat Mozzarella cheese, shredded |

low-fat Monterey Jack cheese, shredded |
Directions:
Prepare rice as per package directions.
Heat oil in a large non-stick skillet over medium heat. Sauté garlic for 30 seconds; add onions, bell peppers and broccoli and cook 5 minutes. Stir in cooked rice and remaining ingredients. Cover skillet, reduce heat to low and cook 2 more minutes, or until cheese is melted.
