This recipe appeared on Carolina® and River® Rice packages from late 1960's. This recipe can be enjoyed using regular white rice or for a nutty-flavor try preparing using brown rice.

Ingredients

1 1/2 cups cooked, Mahatma® Whole Grain Brown Rice
2 1/2 cups milk, scalded
1 Tbsp butter
vegetable cooking spray
3 eggs, slightly beaten
3/4 cup sugar
1/4 cup raisins
1/4 tsp salt
2 tsp vanilla
1/4 tsp nutmeg

Directions

Preheat oven 325°F. Spray 2-quart square baking dish with vegetable oil cooking spray. Combine all ingredients and pour into prepared baking dish. Place baking dish in a larger baking dish in the oven. Pour VERY HOT water in the larger dish so that the water comes halfway up the sides of the smaller dish. Bake 40 to 45 minutes, or until set.
