Whole Grain Spanish Rice

A traditional favorite made with whole-grain brown rice ... just sauté onion, corn and cumin for two minutes.  Add tomato sauce, cooked rice and simmer for five minutes.

Ingredients

1 tsp vegetable oil
1/4 cup onion, chopped
1/4 cup frozen corn, thawed
1/2 tsp cumin
1 can (8 oz.) Mexican-style tomato sauce
2 cups cooked, Mahatma® Whole Grain Brown Rice
1/4 cup cilantro, chopped
1 Tbsp lime juice

Directions

Heat oil in a medium saucepan over medium heat. Add onion, corn and cumin and sauté 2 minutes. Add tomato sauce, reduce heat to low and simmer 5 minutes. Stir in rice, cilantro and lime juice.
