Creamy Chicken & Rice Casserole

Serves 6

Ingredients:

non-stick cooking spray
3 cups cooked, Mahatma® Brown Rice (Whole Grain)
2 cups (8 ozs) Monterey Jack cheese, shredded
12 ozs cooked, diced chicken (about 2 cups)
1 can (12 oz) evaporated milk
1/2 cup red onion, finely chopped
2 ea large eggs, lightly beaten
1/4 cup fresh parsley, chopped
2 tbsp butter or tub margarine, melted
1 tbsp fresh jalapeño, minced (optional)
salt and pepper, to taste (optional)


Directions:

Preheat oven to 350 degrees. Coat a 2-quart oven-proof casserole dish with non-stick cooking spray. In a large bowl, stir well to combine all ingredients. Pour into prepared dish and bake 30 minutes.




Brown Rice is an excellent source of whole grains.
