Rice and Olives Olé

2 Tbsps olive oil
1 Tbsp minced garlic
1 Tbsp shallot, minced
1 1/2 cups water
1 cup Mahatma® Jasmine Rice
1/2 cup olives, pitted and chopped
1/2 cup roasted red pepper, chopped
2 cups fresh baby spinach leaves, chopped
1/4 cup Parmesan cheese, shredded
2 Tbsps pine nuts, toasted

Cooking Directions

In a medium saucepan, heat olive oil over medium heat.  Add garlic and shallots and sauté 30 seconds.  Add water and bring to a boil.  Stir in rice, cover, reduce heat and simmer 15 minutes.  When rice is ready, stir in olives, red peppers, spinach and parmesan cheese.  Stir until spinach is wilted, about 1 minute.  Serve topped with pine nuts.

A great side dish for chicken, salmon or lamb.
