1 Tbsp vegetable oil
1 lb boneless skinless chicken breast, cut into thin strips
1 cup onion, chopped
1 cup red bell pepper, chopped
1 cup Mahatma® Jasmine Rice
2 Tbsps fresh lemon juice
1 tsp salt, optional
1 can (14 oz.) chicken broth
1 can (14 oz.) artichoke hearts, drained and quartered
1 cup fresh baby spinach leaves, packed
1/4 cup Parmesan cheese, shredded

Cooking Directions

Heat oil in a large skillet over medium-high heat. Add chicken, onion and bell pepper and sauté five minutes. Stir in rice, lemon juice, chicken broth, artichoke hearts and salt, if desired. Bring mixture to a boil. Reduce heat to low, cover, and simmer 15 minutes, or until liquid is absorbed and rice is tender. Remove from heat and fold in spinach. Transfer to serving bowl. Top with parmesan cheese and serve.
